7oz(200g)frozen fish fillet
7oz(200g)short grain rice
1 leek
1 hard boiled egg
2 diced tomatoes
1 tablwspoon olive oil
a few leaves of basil
defrost the fish fillet.Cook the rice in 2 cups of water untill almost mushy, remove from stove
clean the leek and halve it length ways and cut into very thin strips.Peel the egg and chop finely.
Fry the fish in olive oil on both sides. Add the leek and tomatoes, and fry together with the fish for another 5 minutes. Remove from the heat and break up fish with a fork. Stir in the rice and chopped egg. Sprinkle on basil leaves. Serve in portions
